Ingredients材料:
- 90g Butter/牛油90克
- 50g Caster Sugar/幼砂糖50克
- 140g Plain Flour/麵粉140克
- 1 tbsp Milk Powder/奶粉1湯匙
- 150g Cashew Nuts/腰果150克
- 2 Egg Yolks/蛋黃2個
Method做法:
1. Preheat oven to moderate 180°C. 預熱烤箱攝氏180度。
2. Soak cashew nuts with boiling water for 5 minutes. Remove and wipe dry. Bake at 180°C for 5 minutes. Save half of cashew nuts for decoration and finely chop the rest (about 20 cashew nuts). 腰果用滾水略浸5分鐘,盛起抹乾,放入烤箱以攝氏180度烤約5分鐘,一半留作餅面用,一半切碎(約20粒)。
3. Beat butter and sugar until light and creamy. Add one egg yolk and beat until combined. 牛油加入糖,打至奶白色呈忌廉狀,加入蛋黃一個拌均。
4. Fold in sifted flour, milk powder and chopped cashew nuts. Stir well to form a dough and divide into two logs (2.5cm in diameter). Chill for 2 hours. 加入已篩均的麵粉、奶粉、腰果碎,搓均成粉團,並分作兩份,每份做成直徑2.5釐米的長條,放入冰格雪兩小時。
5. Cut the logs into 1/2cm thick rounds. Brush with egg yolk. Decorate with cashew nuts. 取出切成1/2釐米厚的餅塊,餅面掃上蛋黃,再放上腰果。
6. Bake for 20 minutes. Cool on wire rack. 放入預熱烤箱,以攝氏180度烤約20分鐘,餅乾放在鐵綫架上待涼才享用。

- 可以預先做粉團,需要用時才從冰格取出,解凍片刻,便可烤。
